Apple Cinnamon Protein Muffins

Ingredients
- 1½ cups almond flour
- 1 scoop vanilla protein powder (plant-based or collagen, about 30g)
- 1 teaspoon baking soda
- 1½ teaspoons cinnamon
- ¼ teaspoon sea salt
- 3 eggs
- ¼ cup maple syrup
- 3 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- ¼ cup unsweetened applesauce
- 1 apple, peeled and finely diced

Preheat oven to 350°F (175°C). Line a muffin tin with 10 paper liners.

In a large bowl, whisk together almond flour, protein powder, baking soda, cinnamon, and sea salt.

In a separate bowl, whisk eggs, maple syrup, coconut oil, vanilla, and applesauce.

Pour wet ingredients into dry and mix until smooth. Fold in diced apple.

Divide batter evenly among the 10 lined muffin cups.

Bake for 18–20 minutes until a toothpick inserted in the centre comes out clean and tops are golden.

Cool for 10 minutes before removing from tin.

These are a great on-the-go breakfast. Pair with a hard-boiled egg or nut butter for a balanced, protein-rich meal.
