Grain Free Sandwich Bread

Ingredients

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ¼ cup ground flaxseed
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 5 eggs
  • ¼ cup melted coconut oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons water

Instructions

    Preheat oven to 350°F (175°C). Grease a standard loaf pan and line with parchment paper.

    In a large bowl, whisk together almond flour, coconut flour, flaxseed, baking soda, and sea salt.

    In a separate bowl, whisk eggs, melted coconut oil, apple cider vinegar, and water.

    Pour wet ingredients into dry and mix until a thick batter forms.

    Transfer batter to the prepared loaf pan and smooth the top.

    Bake for 32–35 minutes until golden on top and a toothpick inserted in the centre comes out clean.

    Cool completely on a wire rack before slicing — at least 30 minutes.

Chef's Note

This bread slices best when fully cooled. Store in the fridge for up to 5 days or slice and freeze for up to 2 months.
