Sesame Chicken

Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons avocado oil
- 3 tablespoons coconut aminos (or tamari)
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon arrowroot powder (or tapioca starch)
- 2 tablespoons water
- 2 tablespoons sesame seeds
- 3 green onions, sliced
- Cauliflower rice or steamed broccoli, for serving

Heat avocado oil in a large skillet or wok over medium-high heat.

Add chicken pieces and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.

While chicken cooks, whisk together coconut aminos, honey, sesame oil, garlic, and ginger in a small bowl.

In a separate small bowl, mix arrowroot powder with water to create a slurry.

Pour the sauce over the cooked chicken and stir to coat. Add the arrowroot slurry and stir for 1–2 minutes until the sauce thickens.

Remove from heat. Sprinkle with sesame seeds and green onions.

Serve over cauliflower rice or alongside steamed broccoli.
Chef's Note
Coconut aminos are a great soy-free alternative that's lower in sodium than regular soy sauce. Find it at most health food stores.
